Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Gradually add in the flour and salt, mixing until a soft dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet, flattening them slightly.
- Bake for 12-15 minutes, or until the edges are lightly golden. Allow them to cool completely on a wire rack.
- Meanwhile, in a small saucepan, heat the heavy cream over low heat until just warm. Remove from heat and stir in the white chocolate chips until melted and smooth.
- To assemble, spread a layer of raspberry jam on top of one cookie, drizzle with melted white chocolate, and then sandwich it with another cookie. Repeat for the remaining cookies.
- Garnish with fresh raspberries and serve. Enjoy your sweet treat!
